Ingredients:
• Shrimp – 1 Pound
• Tree & Vine Extra Virgin Olive Oil
Aulente Single Estate – 2 Tablespoons (or your favorite)
Roasted Garlic – 1 ½ Tablespoons
Chipotle – 1 ½ Teaspoons
• Paprika – 2 Teaspoons
• Coriander – 2 Tablespoons, ground
• Cumin – 1 Tablespoon, ground
• Ginger – 1 Teaspoon, ground
• Salt – to taste
• Juice of 1 Lemon
Method:
• Peel & devein shrimp
• Salt well and set aside for 10 minutes
• In sauté pan heat EVOOs over medium-high heat for 2-3 minutes
• Add all ground spices, stir often for about 2 minutes
• Add shrimp and stir constantly for about 4 to 5 minutes or until pink
• Remove from heat and add lemon juice
• Toss to combine, serve immediately (with couscous is perfect)
