Ingredients:
• Green Tomatoes – 1 Pound
• Tree & Vine Grey Sea Salt & Five Pepper Blend– to taste
• Cornmeal – ½ Cup (Stone ground is best)
• All-Purpose Flour – ¼ Cup
• Goat Cheese – 5.3 oz package
• Tree & Vine Fig Balsamic – 2-3 Tablespoons
• Tree & Vine Single Estate Extra Virgin Olive Oil (EVOO) – ¼ to ½ Cup
Method:
• Slice tomatoes into approx. ½ inch thickness
• Season tomatoes with grey sea salt blend
• In medium size bowl, combine cornmeal & flour
• Heat EVOO in a large cast-iron pan over medium heat
• Once up to temperature, begin dusting tomatoes with cornmeal and flour mixture (do this just before adding to pan)
• Without crowding, place in pan , brown well on both sides (3-4 minutes each side)
• Cook tomatoes in batches adding oil if needed
• Remove from oil and drain on paper towels (add salt if needed)
• While still warm place on serving dish
• Sprinkle with goat cheese (to your liking)
• Then drizzle with fig balsamic
• Enjoy
