Ingredients:
• Asparagus – 1 lb.
• Tree & Vine Single Estate Extra Virgin Olive Oil (or try your favorite Tree & Vine infused EVOO)
• Grape Tomatoes – halved, 1 ½ Cups
• Garlic – ½ Teaspoon, minced
• Tree & Vine Traditional Aged Balsamic – 2 Tablespoons
• Sea Salt – ¼ Teaspoon
• Goat Cheese – ½ Teaspoon, Crumbled
• Black Pepper – ½ Teaspoon
Method:
• Trim asparagus
• Halve tomatoes
• Mince garlic
• Blanch asparagus in lightly salted water and drain
• Heat olive oil in a large skillet over med-high heat
• Add asparagus and quickly sauté. Remove and put on platter
• In same pan, add tomatoes & garlic, cook 5 minutes
• Stir in Vinegar, cook 2 minutes
• Stir in salt, sauté another minute
• Spoon over asparagus
• Sprinkle with goat cheese & black pepper
• Enjoy
